Slow Cooker Mexican Pulled Pork Tacos

Ingredients:

  • 3 lbs pork shoulder, trimmed and cut into chunks
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Corn tortillas
  • Toppings: diced onions, cilantro, lime wedges, salsa, sour cream

Instructions:

Place pork chunks in the slow cooker

In a bowl, mix chopped onion, minced garlic, ground cumin, chili powder, paprika, oregano, cayenne pepper, salt, and pepper

Pour this mixture over the pork

Add chicken broth to the slow cooker

Cover and cook on low for 6-8 hours or until the pork is fork-tender and easily shreddable

Remove the pork from the slow cooker and shred using two forks
